Homemade Mac & Cheese

Best-EVER recipe for Veggie Evolution Homemade Mac & Cheese


  • 1lb Pasta (any style - I use gluten free)
  • 3/4 cups Pancetta or Bacon (5-6 slices)
  • 2 tablespoons Butter or Coconut Oil
  • 1/4 cup Flour (any kind)
  • 2 cups Cream or Half & Half
  • 2 cups Cheese (chef's choice - I like to mix varieties including cream cheese)
  • 1/2 cup Veggie Evolution Kale Crisps (crumbled - Chipotle for some added flavor, but Lemon Parmesan would also work well)
  • a pinch of Nutmeg
  • Salt & Pepper (to taste)


  • 1/4 cup Parmesan Cheese


I'm not sure if the Kale Crisps make this healthy, but they sure can't hurt!


Step 1 Boil Pasta. Reserve some pasta water.
Step 2 Saute pancetta over medium heat. (Preferably in an oven safe 10-12" pan, so as to add all ingredients and stick it in the oven)
Step 3 Remove pancetta, cut into small pieces once cool.
Step 4 Leave rendered fat in pan and add butter/coconut oil until melted
Step 5 Stir in flour until fat is absorbed
Step 6 Reduce heat to medium-low. Stir in cream.
Step 7 Simmer until thickens, stirring constantly.
Step 8 Add nutmeg, salt and pepper to taste
Step 9 Fold in cheese until combined. Salt and pepper to taste
Step 10 Stir in pasta, cheese roux, pancetta and Kale Crisps.
Step 11 Add some reserved pasta water if consistency needs adjusting.
Step 12 Spread out in pan or baking dish. Sprinkle with parmesan cheese.
Step 13 Bake in oven at 350 for 20 minutes, or until top is golden brown.
