Sweet Squash, Savory Sausage, Strong Kale

- Spagetti Squash (or other hard squash)
- 1lb Sausage
- 1 bunch Kale (if large, de-stem, dice stems and saute for 5 minutes before adding chopped leaves)
- 1 handful Veggie Evolution Kale Crisps (flavor of choice)
- Grated Parmesan (optional)
This is one of my favorite recipes. A quick, simple, delicious combination of sweet, salty and bitter--plus the crunch of Veggie Evolution Kale Crisps makes the perfect meal (gluten and dairy free to boot)!
|Step 1||Cut spagetti (or other hard) squash in half. Place face down in oven at 350 degrees. Roast until knife goes in easily, about 45 minutes.|

Saute sausage. Remove from pan when fully cooked.
|Step 3||Saute chopped kale in rendered sausage fat. |
|Step 4||Once squash is cooked, fork it out of skin and layer it at the bottom of a baking dish. Add kale and sausage in separate layers. Grate parmesan cheese for the top (optional). Cook in oven (still at 350) until hot or cheese is melted, about 15 minutes. |
|Step 5||Remove from oven. |
Sprinkle with Veggie Evolution Kale Crisps (the crunch is fantastic).
