  • 1 packet Tortillas (Organic Corn, Flour, Rice, you have options)
  • 1 cup Quinoa (dry)
  • 1 cup Cheese of choice (grated)
  • 1 Avocado (sliced or chunked)
  • 1/2 Cucumber (halved, quartered lengthwise, cut in 1/2 inch slice)
  • 1 scoop Hummus (or other spread you have on hand)
  • 1 scoop Salsa
  • 1 scoop Yogurt, plain (or Sour Cream)
  • 1 handful Veggie Evolution BBQ Veggie Crisp (crumbles left at the bottom of the bag)


This recipe is super adaptable. I used the vegetables I had on hand. The addition of Veggie Crisp crumbles adds so much flavor and crunch and makes the meal seem much more gourmet!


Step 1 Place 1 C quinoa in pot with 2 C water and a dash of salt. Bring to a boil. Boil for 10 minutes, then turn off heat and let sit for 5 minutes.
Step 2 Warm tortilla in skillet on stovetop over medium heat. This will make the corn tortilla pliable and tasty!
Step 3 Sprinkle cheese on warming tortilla to melt (optional, you can add cheese cold if you prefer)
Step 4 Spread glob of hummus on top
Step 5 Scoop 1/4 cup of quinoa into tortilla
Step 6 Add remaining ingredients and top it all off with Veggie Evolution Veggie Crisp crumbles to dress up an easy meal!
